In 68.0.x esr and onwards, the option "Never update Firefox" has been removed from Preferences, just as predicted upthread by Barkin.
So in order to prevent the new update nag screen, first ensure the "check for updates but let you choose to install them" box is ticked,
then go to "about:config ...

No, hang on to the "base" iso, i.e. precise-light-5.7.1+0.iso, and keep it somewhere secure because you'll need it to merge with (generate) the next delta update, if and when one's released.
